What you'll need
Method
- Stopper in. Push the rubber stopper firmly into the bottom of the brewing container (from the outside).
- Filter in. Dampen the felt filter and press it into the base.
- First round. Pour in 1 cup of water, then add half the coffee (170g).
- More water. Slowly pour in 3 more cups of water in a circle, wetting all the grounds. Wait 5 minutes.
- Second round. Add the other 170g of coffee, then slowly pour in the last 3 cups of water.
- Don't stir. Stirring can clog the filter. If any dry grounds are sitting on top, press them down gently with the back of a spoon.
- Steep. Leave it at room temperature for 12–24 hours: 12 hours for smoother and lighter, 18–24 for stronger and bolder.
- Drain. Sit the brewer on the decanter, pull the stopper, and let it drain completely.
- Store. Bin the grounds, rinse the filter, and keep the concentrate in the fridge for up to 2 weeks.
How to serve it
- Iced: pour 1 part concentrate over ice with 3 parts cold water or milk.
- Hot: add hot water to the concentrate rather than heating the concentrate itself. It stays smoother that way.
- Stronger: use less water. Concentrate is easy to adjust.
Dial it in
- Bitter: the grind's too fine. Use coarse (plunger) grind.
- Weak: steep longer, or use less water when serving.
- Filters: the felt filter lasts about 10–12 brews or 3 months. Rinse it after each use and keep it in water in the fridge.

FAQ
How long should cold brew steep?
12–24 hours at room temperature. Longer gives a stronger concentrate.
Can I steep it in the fridge?
Yes, but it extracts more slowly, so allow the full 24 hours.
How long does cold brew last?
Up to 2 weeks in the fridge as concentrate.
What grind is best for cold brew?
Coarse, like plunger or French press grind.
Is cold brew stronger than regular coffee?
The concentrate is. Once it's diluted, the strength depends on your mix.
Can cold brew be served hot?
Yes. Add hot water to the concentrate.
