How to Store Coffee So It Stays Fresh

The short answer

Keep coffee airtight, dark, cool and dry: in its bag with the air squeezed out and sealed, or in an opaque airtight canister in the cupboard. Once opened, whole beans are at their best for about 1 to 3 weeks and ground coffee for 1 to 2 weeks. Skip the fridge, and only freeze it in sealed portions.

Coffee doesn't go off like milk. Stale coffee is safe to drink; it just tastes flat, dull and a bit cardboard. Storing it properly keeps the flavour you paid for.

01

What makes coffee go stale

Four things: air, moisture, heat and light. Once coffee is roasted, its aroma slowly escapes and the oils react with oxygen. That's what turns a rich, punchy coffee flat.

Ground coffee goes stale faster than whole beans, because grinding exposes far more of the coffee to the air.

02

Where to keep it

  • Somewhere cool and dark: a cupboard, away from the oven, the dishwasher and the afternoon sun.
  • In the bag, sealed properly: a good coffee bag is built for this. Squeeze the air out, roll it down and clip or seal it.
  • Or in an airtight, opaque canister: one that blocks light. Clear jars look good on the bench but let the light in.

Our storage tin has a push-seal lid, a one-way valve and a date wheel, so you can track when you opened it. It holds 425g.

03

How long does coffee last?

Coffee At its best
Unopened bag Until the best-before date
Whole beans, opened, in the cupboard 1–3 weeks
Ground coffee, opened, in the cupboard 1–2 weeks
Whole beans, sealed, in the freezer 3–4 months

These are rules of thumb from the US National Coffee Association. Coffee past them is still fine to drink. It just won't taste as good.

Buy what you'll drink in a week or two. If you buy a 1kg bag, freeze some of it in portions (below).

04

Should you put coffee in the fridge?

No. The fridge is damp and full of smells, and coffee soaks up both. Every time you take it out, moisture condenses on the cold beans. It doesn't keep coffee any fresher than the cupboard does.

05

How to freeze coffee properly

  1. Split it into portions of about a week's worth.
  2. Seal each portion airtight, with as much air out as you can.
  3. Freeze them, and take out one portion at a time.
  4. Don't refreeze a portion once it's thawed.
  5. Let a sealed portion warm up before opening it, so condensation doesn't form on the beans.

Whole beans can go straight from the freezer into the grinder.

06

Why fresh coffee needs a short rest

Freshly roasted coffee gives off carbon dioxide for days afterwards. That's what the little one-way valve on a coffee bag is for: it lets the gas out without letting air in.

Many roasters suggest letting beans rest for at least a few days after roasting before brewing, and a little longer for espresso. Coffee that's too fresh can give gassy, uneven shots.

The bottom line

Keep it sealed, dark, cool and dry. Buy what you'll use in a week or two, freeze the rest in sealed portions, and leave it out of the fridge.

FAQ

Does coffee go off?

Not in a way that makes it unsafe, as long as it stays dry. It goes stale: the flavour and aroma fade. Damp coffee can grow mould, so bin it if it's been wet.

Should I keep coffee in the fridge?

No. It picks up moisture and smells, and keeps no better than in the cupboard.

Can you freeze coffee beans?

Yes, in sealed, airtight portions. Take out one portion at a time and don't refreeze it.

How long does ground coffee last once opened?

It's at its best for about 1 to 2 weeks. Whole beans last a little longer, about 1 to 3 weeks.

Is it better to keep coffee in the bag or a canister?

Either works if it's airtight and keeps the light out. A good coffee bag, squeezed flat and sealed, does the job. An opaque canister makes it easier.

What's the valve on a coffee bag for?

It lets carbon dioxide from freshly roasted coffee escape without letting air back in.
